Vegetable Masala is a delicious mixed vegetable masala, prepared using spices, chopped vegetables and tomatoes. The vegetables used can be varied according too taste and seasonality. Vegetable masala can be served as side dish along with Chapathi, parata, kulcha, Naan, and rice.

Vegetable Masala Ingredients
Beans, Cauliflower, potatoes, carrots, peas, cabbage - 4 cups
Onions - 3
Tomatoes - 4
To prepare Masala:
Poppy seeds - 2 teaspoon
Grated coconut - 3 Tablespoons
Corinder seeds - 1 tablespoons
Cumin seeds - 1 teaspoon
Cinnamon - 1 teaspoon
Cardamom - 4 pods
Cashewnuts -12
Peppercorns - 10
Turmeric powder - 1 teaspoon
Onion - 2
Garlic - 6 cloves
Ginger - 1"
Green Chillies - 4
Lime juice - - 2 tablespoons
Salt - to taste

Vegetable Masala Preparing Method
1. Wash and cut all the vegetables in to 1" pieces. Boil the vegetables in a vessel with enough salt and water (Add enough water- 2 cups) until soft
2. Grind all the masala ingredients into a paste with enough water
3. Heat the oil in a heavy bottomed pot. Add the chopped onions and cook until transparent. Add the tomatoes and cook for 3 minutes
4. Add the vegetables and the masala and cook for 5 minutes. Garnish with coriander leaves and serve Vegetable Masala curry with chappati, roti, etc.,
