Vegetable Manchurian

Ingredients
Vegetables (Carrot, beans, cabbage, beetroot, peas, potatoes, etc.,) - 2 cups
Spring onions - 1/2 cup
Ginger garlic paste - 2 teaspoons
Maida / Plain Flour - 2 tablespoons
Corn flour - 3 tablespoons
Chilli powder - 1/4 teaspoon
Red Chillies - 2
Oil - 3 tablespoons
Milk - 1 tablespoons
Salt to taste
Water - 2 cups
Preparing Method
1. Finely chop the vegetables and boil them in enough water. Drain the excess water if any and keep it aside
2. Mix the cooked vegetables with 1 tablespoon of cornflour and salt (to taste) adn roll them into balls
3. Prepare the batter with plain flour, remaining cornflour, 1 teaspoon of ginger garlic paste, chilli powder, salt, the excess vegetable water and water. The batter is used to dip the vegetable balls. So, it should not be neither too thin nor thick
4. Dip the vegetable balls in the batter one by one and deep fry in hot oil. Keep aside
5. Heat 2 tablespoons of oil, add remaining ginger garlic paste and red chillies and fry them
6. Add the chopped spring onions and fry. Then add 1 1/2 cup of water to boil
7. Mix 1 tablespoon of corn flour to the gravy and stir properly
8. When it gets cooked, add the vegetable balls and stir slowly. Keep it sim for 5 minutes and serve
This can be served with chappathi, romali roti, naan, paratha and fried rice
