A simple side dish recipe but with a lot of flavors. Potato Stew tastes so good along with appam, dosa, chapathi or anything you would imagine.

Potato Stew Ingredients
Red potatoes - 6 nos
Onion - 1
Green chillies - 4 no
Coconut milk- as needed
Garam masala powder- 1 teaspoon
Turmeric powder- 1 pinch
Coriander powder- 1 tablespoon
Salt- to taste
Coriander leaves for garnishing

For seasoning:
Oil - 1 tablespoon
Mustard seeds- 1 teaspoon
Urad dall - 1 teaspoon
Curry leaves - 8-10

Potato Stew Preparing Method:
1. Wash the potatoes and clean their skin. Cut them into large cubes
2. Chop the onion and green chillies into small pieces
3. Add salt, turmeric powder, onion and chillies to potatoes and cook them with adequate water
4. Cook them on low heat for a long time in an open vessel. When they are well cooked the water would have thickened, stew is ready gathering all the starch from the potatoes
5. In another pan, heat oil, sputter mustard seeds, urad dhal, curry leaves
6. Add coriander powder, garam masala powder and the stew
7. Add coconut milk and adjust thickness according to your need. When the Potato Stew comes to a boil, switch off the heat. Garnish with coriander leaves and serve.
