Fenugreek sambar
Fenugreek is one of the medicinal herbs. It is fried and used to increase the flavour of the curry. Fenugreek seeds has a variety of medicinal uses like it reduces menstrual pains, increases breastmilk production, very good source of iron, etc.

Ingredients
Green gram dhal - 1 cup
Onion -2
Tomato - 4
Green Chillies -1
Tamarind - 1/2 cup concentrate ( see Cookery Tips )
Turmeric powder -1/2 teaspoon
Curry leaves, Corriander leaves
Salt to taste
Mustard - 1/2 teaspoon
Urad dhal - 1 teaspoon
Fenugreek seeds - 1/2 teaspoon
Red chillies -2
Oil - 3 teaspoon
To fry & grind:
Red chillies -4
Fenugreek - 1/2 teaspoon
Cumin seeds - 1/2 teaspoon
Preparing Method
1. Fry the green gram dhal in a kadai for few minutes and then add water and turmeric powder. Allow this to cook
2. Chop green chillies lengthwise and finely chop tomatoes, onions
3. Add them to the dhal and half cup of tamarind concentrate and continue cooking
4. In another pan, fry the above said ingredients and grind it to a powder
5. Add the powder into the sambar and allow it to cool
7. Heat the oil and add the mustard seeds, urad dhal and asafetida. When they splutter add curry leaves and coriander leaves and add the to the sambar
