Dhokla is basically a North Indian recipe. This also called as Kancheepuram Idli in South India. This is an easy snack prepared with less oil

Ingredients
Red gram flour(besan) - 350gms
Curd - 1cup
Green Chillies - 3
Ginger - 1/2"
Soda bi-carb - 1 teaspoon
Lemon juice - 1 teaspoon
Turmeric powder - 1/2 teaspoon
Oil - 1tablespoon
For seasoning:
Curry leaves - few
Mustard Seeds - 1 teaspoon
Oil - 2 teaspoons
Coriander leaves - few
Salt to taste

Preparing Method
1. Mix gram flour, curd, salt and water and make a smooth batter. The batter should be of thick consistency and aside for 4 hours
2. Make the ginger and green chilli into a paste and add to the batter. Also add turmeric powder, soda bi-carb, 1tsp oil, and lemon juice and mix well
3. Grease a baking dish (it should fit in the steamer or cooker) and keep it ready
4. Pour the batter into the greased pan and steam (pressure cooker) for 10-12 minutes or till done
5. Cool for sometime and cut into big cubes
6. Heat little oil in a small pan and add mustard seeds and curry leaves allow to splutter. Remove and pour it over dhoklas
Garnish the besan dhokla with coriander and slited green chilies
Variation: Vegatables like carrots, beans, peas can chopped finely and mixed with the batter before steaming. This will give a nutritious as well as attractive Dhokla
