Coconut Milk Biriyani ingredients:
Basmati Rice - 2 cups
Coconut milk - 3 1/2 cups
Onions - 2
Green Chillies - 3
Mint leaves - few
Coriander leaves - few
Salt - to taste
Ginger-garlic paste - 2 teaspoons
To saute:
Cinnamon - 2
Cloves - 2
Cardamom - 2
Ghee - (optional) 1 teaspoon
Oil - 2 tablespoon

Coconut Milk Biriyani Preparation:
1. Wash the basmati rice and soak in water for one hour
2. Cut the onions an chillies lengthwise
3. Heat the cooker with oil and ghee
4. Add cinnamon, cloves, cardamom, onions, chillies and salt. Fry for few minutes
5. Then add the ginger-garlic paste, mint and coriander leaves. Fry until the raw smell goes off
6. Now add the coconut milk and allow it to boil
7. Then add the soaked basmati rice , mixx well and close the cooker
8. After the first whistle, leave it in sim flame for 5 minutes. Then remove from flame. After 15-20 minutes mix properly without smashing and serve with vegetable curry. This coconut milk biriyani is suitable for lunch
