Ingredients
Chopped onion - 1 1/2 cups
Unsalted butter - 1 tablespoon
Shelled fresh peas - 6 cups
Chicken broth - 6 cups low-salt
Chopped fresh mint leaves - 1 tablespoon
Freshly ground white pepper
Well-shaken buttermilk - 3/4 cup
Toasted French bread, as an accompaniment
Preparing Method
1. In a saucepan cook onion in butter, covered, over moderate heat, stirring occasionally, 5 minutes, or until tender.
2. Add peas and broth and simmer, uncovered, 5 minutes, or until peas are tender. Stir in mint.
3. In a blender puree soup until smooth and pour through a coarse sieve back into pan.
4. Heat soup over moderate heat until hot and remove pan from heat.
5. Add white pepper and salt, to taste, and stir in all but 4 teaspoons buttermilk.
Divide soup between 6 bowls and gently spoon remaining buttermilk onto each serving.
