Rasagulla - Indian Milk Sweet

Ingredients
Milk - 1 litre
Sugar - 200g
Maida - 2 tablespoons
Cardamom - 5
Rose essence - 2 drops
Lime - 1
Preparing Method
1. Peel the cardamom and make it into a powder
2. Squeeze the lemon and keep it aside
3. Now boil the milk in a thick bottom vessel. When the milk comes to boiling point add the lime juice
4. The milk gets curdled. Now drain the whey water completely from the milk using a muslin cloth. This is paneer
5. Now mix the paneer with cardamom powder and maida and make it into a soft dough. Make them into small equal sized balls.
(Much care should be taken while kneading the dough. Air should not be locked inside the dough and also dont knead the dough hardly)
6. Now add 400ml of water to the sugar in a thick bottom vessel and boil it
7. When it comes to boiling add the rasagulla balls and continue boiling for 10-12 minutes
8. Sprinkle little cold water while boiling to avoid over boiling. Remove from flame and add rose essence.
9. Cool it and leave it in refrigerator. Serve Rasagullas chill
