Serves - 4

Rice Pudding Ingredients
Milk - 4 cups
Basmathi Rice - 2 tablespoons
Sugar - 6 tablespoons
Cardamom powder - 1/2 teaspoon
Almonds(blanched and sliced) - 1
Cashewnuts - 5-10
Pistachios - 5-10
Saffron - few

Rice Pudding Preparing Method
1. Wash the rice and soak it in a little water for about 30 minutes. Grind the rice with just enough water in which it was soaked to make a fine paste
2. Pour the milk in a vessel and boil it. Then simmer the flame
3. Meanwhile, take a little of this hot milk in a bowl, add the rice paste and dilute it to a very thin consistency. Add this to the simmering milk and mix, stirring continuously
4. Cook on low heat for 15 minutes till the milk has thickened
5. Add sugar and stir well. Keep in simmered flame for about 5 minutes. Remove from heat
6. Add the saffron and sprinkle cardamom powder on top. Garnish with sliced almonds, pistachios and cashewnuts.
